Production model of dry yellow fish in Vung Tau

With more than 20 years in the profession, Nga Son seafood processing factory in Phuoc Thai hamlet, Phuoc Tinh commune, Long Dien district can supply about 3 tons of dried yellow fish every month to the Ba Ria - Vung market. Ship, Ho Chi Minh City, Hanoi, Hai Phong, Quang Ninh.
At this facility, dried yellow fish is produced by clean process, closed from raw material input to finished products. Raw fish is imported from the fishing facilities have food safety certificate issued by the Department of quality management.
When arriving at the processing area, workers use urethral paprika to ensure fresh fish, not unhumpeed ure during transport. New standard materials are put into the preliminary processing area.
Freshly groundfish after storage is stored at a temperature of minus 20 to minus 25 degrees Celsius, followed by preliminary processing, cutting off the head, cleansing the intestine and splitting along the back, then rinsing with water. Clean and then soak in ice for about 15 minutes. After picking out dried and then proceed to seasoned marinated.
To meet the demand of large capacity production, each batch of fish marinated into about 10kg. Marinated ingredients include salt, sugar, monosodium glutamate, spices ... meet hygiene standards food safety. The marinated fish is transferred to a semi-finished warehouse and refrigerated for one day and then brought to dry.
Normally, the ideal exposure time is from 6am to 5pm in the sun. At the end of the day, if the fish is not completely dried, workers will bring the fish to dry until the standard moisture to put into the package. The finished product is stored in a dry store and awaits delivery to the consumer
Besides dry yellow fish, Nga Son also produces spicy salmon. The process of preliminarily processing and processing dried goby is similar to golden fish. On all dry products of the facility, all information about production facilities, production date, ingredients, usage, storage time, etc. are fully recorded.
